CRISPY ZA'ATAR CHICKPEAS WITH LABNEH & ZESTY GREMOLATA
This crispy chickpea salad is LEAN, light & refreshing, yet filling! It’s one of my go-to recipes at the moment as I work through my postpartum journey.
Chickpeas are a great source of fibre, which contributes greatly to its satiety factor. It adds volume & protein to a meal at a low calorie cost, which is a win win if you ask me!
Partnering plant protein sources such as chickpeas, beans, legumes with dairy (i.e yoghurt, cheese) is such an easy way to create a complete protein profile & get adequate amounts of protein in a dish.
But protein is just one aspect of a healthy meal. Adding a variety of plants such as spinach, tomatoes, cucumbers and radishes enhances the nutrition quality of the meal & provides extra hydration from within.
